Fall is upon us.  And with it, comes a pretty incredible selection of beautiful squashes at our local grocery stores and farmer’s markets.

I live in a farming community.  I’m spoiled because my house is pretty much surrounded by local farmer’s fruit stands.  When I passed this little gem on my way home today, I had to stop and stock up.

I like to share simple make-ahead recipes, because that’s what I make most often in my home.  Meal prep recipes help me stay on track with healthy eating and they save me time during my busy work week.

So…

Today, I’m offering one more simple recipe that’s easy to make-ahead:  Sausage and Apple Stuffed Squash.  This comfort-food favourite is delicious and filling.  It’s served inside the squash skin for a playful presentation.

Sausage and Apple Stuffed Squash

You have a lot of room to play around with the ingredients here.  Pick your favourite type of sausage and apples.

Personally, I like to use spicy Italian sausage and I usually just buy whatever apples I can get fresh and in-season.  The fruit stand that I found the squash at today had fresh picked honey crisp apples, so that’s what I used.

If you eat dairy, feel free to top each squash with a bit of shredded cheese to add more depth to the flavour.  I leave it out because I’m allergic to it… *sigh*

I typically serve this recipe as a stand alone dish since there’s plenty of protein, veggies, healthy fats and smart carbs.  I also recommend doubling it to give yourself leftovers for the week.

Sausage and Apple Stuffed Squash
Instructions
  1. Preheat the oven to 365.
  2. Slice each acorn squash in half. Scoop out and discard the seeds. Rub the open surface of each half with 1 tsp of the olive oil.
  3. Line a large cookie sheet with parchment paper. Place each acorn squash half, open side down, on the cookie sheet. Bake for 45-minutes at 365.
  4. While the squash is baking, prepare the filling.
  5. Heat the remaining tsp of olive oil in a large frying pan over medium heat. Add the onion and garlic to the frying pan and sauté for 1-2 minutes.
  6. Remove the sausage from the casings. Discard the casings and add the sausage to the frying pan, using a spatula to break it into small pieces. Sauté the sausage for 2-3 minutes, until it’s almost cooked through.
  7. Add the apple, mushrooms, salt, pepper, and sage to the frying pan and sauté until the sausage is completely cooked and the apple starts to soften.
  8. Remove the mixture from the heat and set aside.
  9. When the squash are finished baking, scoop the flesh from each one and mix it into the sausage, apple, and mushroom mixture. Be careful to leave the skins intact.
  10. Distribute the squash-apple-sausage mixture evenly amongst each squash skin.
  11. Top each with shredded cheese (if you choose to do so).
  12. Place each stuffed squash skin back onto the baking sheet and bake at 365 for another 10-15 minutes.
  13. Serve garnished with pecans.
