Paleo Pumpkin Crunch Cereal

Fall is my new favourite season.  Especially now that I’m back home and I get the full experience.

I spent that last 4 years living in the far reaches of remote Northern Ontario.

My husband Matt and I used to joke that about there only being two seasons up there — ice season and flesh eating bug season — because it seemed like summer just abruptly transitioned to winter.

This year, I’m grateful that I get to experience all four seasons, especially the beautiful transition from summer to fall…brisk morning air, warm afternoon sun, brightly coloured leaves, and random whiffs of pumpkin spice.

Speaking of pumpkin, I’m kind of obsessed with it right now.  Seriously.  Obsessed enough to have created a pumpkin Pinterest board full of awesome blog recipes that I can’t wait to try.

(Funny coincidence — I’m sitting in a coffee shop sipping on a pumpkin spice chai tea as I write this.  True story.)

Paleo Pumpkin Crunch Cereal

Cereal has always felt like a comfort food for me and fall makes me crave comfort foods.  So, I decided to make a fall-inspired cereal to satisfy my comfort food craving.

This is good stuff.  It’s packed with healthy ingredients like pumpkin, pecans, almonds, vegan protein powder and pumpkin seeds.  And it’s only sweetened with a little bit of pure maple syrup.

It’s hardy enough for breakfast, but also great for snacking.

This cereal is grain free, gluten-free, vegan, and paleo-friendly.

It has so much flavour.  The spices really amp it up.  Seriously, yum!

Paleo Pumpkin Crunch Cereal is super easy to make too.  Just mix all of the ingredients together in a mixing bowl, spread it on a baking sheet, and pop it in the oven.  Simple, right?

Just remember to take it out of the oven every 15-20 minutes to stir it.  That’s how you get it to crisp up.

If you don’t stir it, it still tastes awesome, but it’ll be more like the consistency of oatmeal.

So…if you want that crunch, remember to stir it.

You will love how easy this cereal is to make and you won’t be able to stop snacking on it.

Paleo Pumpkin Crunch Cereal
Instructions
  1. Preheat the oven to 350-degrees.
  2. Combine all of the ingredients in a large mixing bowl.
  3. Spread the mixture in a thin layer over a large cookie sheet lined with parchment paper.
  4. Bake at 350-degrees for 60-minutes, stirring every 15-minutes.
  5. Cool before serving.
